Even though less than two percent of American beef is good enough to earn the coveted USDA Prime rating, it still isn’t good enough for Allen Brothers - because all Prime is not equal. There are always variations in marbling, texture, and color and they can make a tremendous difference in taste and tenderness, which is why we hand-select our beef to make sure each item is the best of the best. Once we approve the meats, we age them to perfection on-site in technologically advanced coolers, maintaining a meticulous balance of temperature, humidity, and air circulation to ensure that every bite delivers the optimum in flavor and tenderness.

Finally, each steak, roast, and chop is hand-cut by our own master butchers in a state-of-the-art facility that goes beyond government requirements for food safety and, in our opinion, far exceeds the practices of other catalogs and butcher shops. It’s only after every cut has gone though our own ten-step approval process that it is shipped to you.
